Notes

Nose
Toasted brioche, honeyed almond, baked apple and a wisp of orange peel.
Palate
A fine, persistent mousse carries flavours of preserved lemon and salted hazelnut over a chalk-driven core.
Finish
Long and saline, with a savoury, almost umami persistence that defines the house style.

West Sussex sits on a sweep of greensand and chalk geologically continuous with the Champagne region across the Channel. The cool maritime climate gives a long, slow growing season — the foundation of every Nyetimber wine.

In the cellar

Vinification

Whole-bunch pressed, fermented in stainless steel with a portion in older oak. Aged a minimum of three years on lees before disgorgement.
